This cake was for my Uncle Bernie's 65th birthday that we celebrated on Sunday. He is an avid model make and his specialty is big rigs and they love to eat at the truck stop so I put all of that in a cake for him. It was also his favorite flavor carrot and I tweaked it with a orange cream cheese filling and a maple italian buttercream. It was so good.
